Kutya is the main ceremonial dish of Ukrainian cuisine for all winter holidays. There are several types of kuti: lean, hungry, memorial, rich. On Christmas Eve and Old New Year, a generous kutyu is prepared. You can add milk, butter and lard to it, because the fast is already over. Ukrainians believe that the richer and heartier the New Year’s table is, the more prosperous and hearty the year will be.
Rich kutya on milk
Ingredients:
- wheat – 400 g;
- milk – 750 g;
- butter – 70 g;
- honey – 50 g;
- poppy seeds – 50 g;
- dried fruits – 200 g.
Wash the wheat several times and soak overnight in cold water (although the store often sells cereals that do not require soaking). Then drain the water, pour milk over the wheat and cook the groats until ready (30-50 minutes). Add butter to the hot porridge and cool under a closed lid.
Pour a glass of warm water over the poppy seeds and leave for 10 minutes. Then grind in a mortar until white “milk” appears. Dried fruits should also be soaked in warm water for 10 minutes. Mix wheat, mashed poppy, dried fruits, honey. If desired, dilute kutya with milk or broth.
A generous bowl of pearl barley
Ingredients:
- pearl barley – 200 g;
- poppy seeds – 100 g;
- walnuts – 100 g;
- raisins – 100 g;
- dried apricots – 100 g;
- honey – 2 tablespoons;
- cream 20% – 70 g.
Wash pearl barley several times and pour water in a ratio of 1:2. Cook pearl barley until half-ready (25-30 minutes). Then pour cream into the porridge and cook for another 30 minutes. Season the finished porridge with honey. Poppy seeds are poured with boiling water for 10 minutes and pounded in a mortar. Finely chop dried apricots and nuts.
Mix pearl barley, poppy seeds, dried apricots, raisins and nuts. If desired, dilute kutya with milk.
Generous kutia with rice and almonds
Ingredients:
- long-grain rice – 120 g;
- milk – 150 g;
- poppy seeds – 70 g;
- almonds – 100 g;
- raisins – 50 g;
- dried apricots – 50 g;
- honey – 2 tbsp.
Soak dried apricots with raisins in boiling water while the rice is cooking. In a separate bowl, also soak the poppy seeds. Wash the rice several times, pour equal amounts of water and milk. Boil the rice until ready (about 25 minutes).
Grind the poppy in a mortar or beat with a blender. Lightly fry the almonds in a dry pan and chop them with a knife. Finely chop dried apricots. Mix cooked rice, almonds, raisins, dried apricots and crushed poppy seeds. Season the dish with honey.
