Let’s start with the fact that this is an ordinary cheese dessert, in the preparation of which there is nothing complicated. The uniqueness of the dish is that it can be prepared both in the oven and without it. Depending on how much free time you have and what budget you have at your disposal, you can choose both the simplest and budget version of a cheesecake made from ordinary cheese, and a restaurant recipe that will require more time and the availability of more expensive ingredients.

For this recipe, cream, cheese, eggs and oil can only be used at room temperature. It is better to take the maximum fat content of the cream, so your dessert will be more tender and creamy.

A very important point – it is better to buy cream cheese for this recipe. Do not try to replace it with cheese or curd mass, as the taste of the final product will be radically different from the taste of the original New York cheesecake.

  • Cookies – 300 gr.
  • Butter – 100 gr.
  • Nutmeg – 0.25 tsp.
  • Cream cheese – 600 gr.
  • Sugar – 100 gr.
  • Cream – 200 ml.
  • Eggs – 3 pcs.
  • Lemon juice – 1 tsp.
  • Vanillin – to taste.

We rub the cookies on a grater or grind them with a blender, if desired, you can add nutmeg. Spread soft butter in the cookies. Grind oil with cookies until smooth. Put the resulting mass in a baking dish and send it to an oven heated to 200°C for 10 minutes.

Add sugar, vanilla, and lemon juice to the cheese. Mix everything well. If you do not like too sweet desserts, you can reduce the amount of sugar or use a substitute. Add eggs and cream to the cheese. Beat everything with a mixer. Pour the filling onto the cake and send it to the oven for 10 minutes. The oven must be preheated to 180°C.

  • Cookies – 250 gr.
  • Butter – 100 gr.
  • Cheese – 500 gr.
  • Sugar – 200 gr.
  • Cream – 300 ml.
  • Lemon juice – 1 tsp.
  • Vanillin – to taste.
  • Fresh strawberries – 300 gr.
  • Gelatin – 20 gr.
  • Fresh mint – 30 gr.

Crush the cookies into crumbs, add soft butter and rub the mass well with your hands. Cover the bottom and walls of the removable form with parchment and spread the resulting mass in an even layer.

Mix the cheese with sugar, cream and vanilla. For this recipe, you can use both cream cheese and regular cheese. Cheese mass is also quite suitable. However, keep in mind that the curd mass is usually quite sweet, so be careful when adding sugar to the filling.

Pour gelatin with water and let it swell. At this time, wash and cut fresh strawberries into halves. Place the sliced ​​strawberries on the cake. Add swollen gelatin to the curd mass. Pour the curd mass on the strawberries and send the dessert to the refrigerator for one hour. Before serving, decorate the cheesecake with fresh strawberries and mint leaves.

No-bake mascarpone cheesecake

  • Cookies – 300 gr.
  • Butter – 150 gr.
  • Mascarpone – 500 gr.
  • Powdered sugar – 180 gr.
  • Cream – 400 ml.
  • Lemon juice – 1 tsp.
  • Vanillin – to taste.
  • Fresh berries – 200 gr.
  • Gelatin – 20 gr.

Crush the cookies into crumbs, add soft butter. Cover the bottom and walls of the removable form with parchment, grease the parchment with butter and spread the resulting mass in an even layer.

Mix mascarpone with powdered sugar, cream and vanilla. Pour gelatin with water and let it swell. Add gelatin to the curd mass and mix everything well. We pour it on the cake, we put fresh berries on top. You can also use frozen berries for this recipe. Note that you do not need to defrost them beforehand, otherwise they will release juice. We take the form with the cheesecake in the refrigerator for 60-90 minutes.

  • Eggs – 4 pcs.
  • Butter – 50 gr.
  • Milk – 100 ml.
  • Flour – 50 gr.
  • Cream cheese – 250 gr.
  • Corn starch – 1 tbsp. l.
  • Salt – a pinch.
  • Lemon juice – 1 tsp.
  • Vanillin – to taste.
  • Sugar – 150 gr.

We make a water bath: we put a large pan with water on the stove. Place the bowl on the pan so that it does not touch the water. Combine cream cheese, milk and butter in a bowl. It is advisable to use fat milk, in this case the cheesecake will be more tender.

We separate the yolks from the proteins. We put proteins in the refrigerator. Add egg yolks, sugar and vanilla to the curd mass. Mix everything well. We sift the flour with starch and add to the curd mass.

Beat the cooled egg whites with lemon juice and salt to stiff peaks. Add the beaten proteins to the dough. Mix everything carefully. We pour the resulting mass into a mold and send it to the oven heated to 150°C for 60 minutes. We put a sheet of water on the bottom of the oven. After an hour, turn off the oven, but do not remove the cheesecake. It should remain in a warm oven until completely cool.
